Super Chocolatey Chocolate Chip Cookies

Today I decided to make some chocolate chip cookies. It has been too long since I last made them, and I’m glad I did. My recipe has some slight modifications from the traditional Nestle Toll House Cookie recipe, and it works for me.

I started by preheating the oven to 375. In a bowl, I mixed in 1 cup (2 sticks) of softened, unsalted butter, 3/4 cup of light brown sugar, 3/4 cup of sugar and 1 teaspoon of vanilla. Since I was not trying to rush things along today, I took my time and did the mixing by hand. There is quite a bit more effort that goes into it, but I needed the workout. Once the mixture was well combined, I mixed in 2 eggs (1 at a time), and 2 teaspoons of milk.

It was time for the dry ingredients. On top of this mixture, I added 2 1/4 cups of flour, 1 teaspoon baking soda, 1 teaspoon salt, and 1/2 teaspoon of cinnamon. I combined everything until the dry ingredients were completely incorporated. Next, I added 3/4 cup of semi-sweet chocolate chips, 3/4 cup of bittersweet chocolate chips, and 3/4 cup of dark chocolate chips. I spooned them onto a cookie sheet that was lined with parchment paper.

I cooked two trays at a time for 5 minutes, then rotated them and cooked for another 5 minutes. If your oven cooks evenly, then you should aim for 9-11 minutes. Mine took about 13 minutes total. Once the first two sheets were out, I had enough dough for one more cookie sheet. After they are out of the oven for about 3 minutes, it’s a good time to run a spatula under them to make sure they are loosened up. Once the cookies are completely cooled, they can be put away. This batch made a little more than 3 dozen cookies, but it would have been more had I made them smaller.

These cookies were delicious. There was a chocolate overload, which I was happy about. The chips were still melty, and the cookies were nice and soft. This is one of my better batches, and I’m glad I decided to make these today. I’ll have some good desserts for the rest of the week. It was a great way to end the weekend and a great way to get started for the work week ahead.

JeannieBird Baking Company – Westminster, MD – 03/28/20

During my time out and about this morning in Westminster, I was also able to stop by JeannieBird Baking Company. Fortunately, they are still open for carry out, so I made my way over there to pick up some treats.

I picked up three things while I was there. Dark chocolate batons, Sweet Potato biscuits, and chocolate chip cookies. The dark chocolates will be good snacks for me throughout the day. And depending on the health study you read, dark chocolate is supposed to be good for you, so at least I’ll be having a healthy snack.

The biscuit I ate was really good. It is their signature yeast-raised sweet potato biscuit. I heated it up a little bit and it had the familiar biscuit consistency and texture, with a slightly sweeter flavor. I really enjoyed this without adding anything to it, and look forward to eating the next one with a little butter.

Later on, I tried the chocolate chip cookies. These were also really good. I enjoy chocolate chip cookies that are softer in the middle, and these were perfect. The chocolate that they use is really good and gave the cookie an extra little bit of sweetness that I really enjoyed. I’m glad that I was able to visit and the employees were also really happy to see the people coming in. Another great way to start off this weekend!

Big Dog Coffee – Pittsburgh, PA

While I was in Pittsburgh last week, there was a need for me to have some coffee drinks (frappes). There were a couple that were in walking distance of my hotel, including Big Dog Coffee. I walked there the first morning I was there (I had arrived the previous evening).

I decided to go with a Mochaccino. This was a very good coffee drink. It had the perfect consistency, and it had a surprisingly sweet coffee flavor. It worked really well and I was happy to have gone there.

There are some pretty cool decorations all over the place, and there was even a working fireplace that first morning, when it was a bit cold. The atmosphere was very friendly, and it seemed like there were quite a few regulars who were there extra early in the morning.

They had these chocolate chip cookies. These cookies were fantastic. Nice and soft on the inside, not too crunchy on the outside. They were so good that I went back a couple of times just to get a cookie.

I went back on the Thursday morning for a coffee drink and possibly something for breakfast. I ordered a Caramel Mochaccino the second time. It was another good frappe. It had nice flavor and a good consistency. The mochaccino was my favorite, but the caramel mochaccino was also good. The banana bread was a good breakfast treat. It was a thickly sliced piece, so it was a perfect amount for breakfast. The banana flavor was nice. Not overbearing, and not something that you had to struggle to try and get the flavor. It had a heavier consistency, but that worked really well as a balance to the coffee drink.

This may have been a little off the main road, but they do have a big sign outside, just in case you need to find it. Good coffee, good cookies, good treats, and a really nice atmosphere made me happy to have been able to try this place last week.
